How to Make Enchiladas

Easy recipe for how to make enchiladas.  This recipes focuses on cheese enchiladas.

Ingredients

  • 12 corn tortillas
  • 1 package of shredded cheese (3 or 4 cheese blend) at least 12 ounces
  • 1 onion (chopped)
  • 2 cans of enchilada sauce (red)

Preparation

Empty one can of sauce onto a plate.

Take a tortilla a quickly dip into sauce, just enough to moisten both sides.  Place wet tortilla on plate, place a small handful of cheese and a few bits of onion on top of tortilla.

Wrap tortilla onto a small roll.  Repeat with other tortillas.

Place rolled tortillas onto sprayed 9×13 inch baking dish.  Pour the rest of the enchilada sauce over tortillas.  Cover pan with aluminum foil.

Bake at 350 degrees for 40 minutes.

Remove and serve with a dollop of sour cream.
